A good launch needs more than a purple bowl, however: the product, machine, portion and workflow must work together. This guide explains the decisions to make before adding açaí to your range and how to prepare your business.
Define your menu before selecting equipment
Start by deciding what your guests should order. A bowl with fruit and granola is a different product from frozen açaí served in a cup or cone. First define a clear portion size and a small selection of topping combinations. For example, you could offer a banana and granola bowl alongside a berry version. These are menu ideas rather than prescribed recipes.
Describe exactly what the price includes for each option. Additional toppings should be clear to guests and your team. This makes it easier to compare orders, preparation and, later, actual ingredient usage.
Match the machine to your açaí mix

Build your costing around your actual portion
Calculate ingredient usage from a portion you have actually prepared. Weigh the base and toppings, and include the bowl, spoon and napkin. In your operating calculation, also account for labour, energy, cleaning, equipment costs and other ongoing expenses. The amount left after subtracting ingredients is not yet profit.
Use several sales assumptions of your own, including a quiet selling day. After launch, compare your assumptions with portions sold and actual usage. Gradually adjust your menu and purchasing in response to those observations.
