Choose a pasteuriser for your ice cream production
A pasteuriser processes your ice cream mix using the selected programme and then cools it down. Suitable batch size and features depend on your recipes, planned daily output and production workflow. Follow the manufacturer’s instructions for operation and cleaning.
Plan the full production process: explore suitable ice cream machines and display cabinets. You can compare leasing and hire purchase or request personal equipment advice.
Buying a pasteuriser: compare five Pastomaster models
Compare your smallest planned recipe batch with the minimum fill and your largest batch with the maximum fill. These figures describe ice cream mix per cycle, not finished ice cream per hour.

Dimensions refer to the water-cooled version and do not include all installation clearances. Allow additional space for connections, operation, cleaning and servicing. The XPL P and 180 RTL brochures label these as dimensions “at the base”. All five models are documented with a 400 V, three-phase, 50 Hz supply; confirm the protective device and cooling configuration before ordering. Optional air cooling may require different installation conditions.
Manufacturer brochures (German): HE (07/2022) · XPL P (07/2022) · 180 RTL (01/2021).
Planning example: a 20-litre batch is within the stated fill range of the Pastomaster 60 XPL P, but below the 30-litre minimum of the 120 XPL P. Choose the programme and machine configuration for your recipe and planned batch size.
HE or XPL P: match the programmes to your recipes
The manufacturer brochures dated July 2022 also distinguish the ranges by programme selection: XPL P offers seven programmes covering pasteurisation, chocolate, cooling/ageing, sugar syrup and invert sugar. HE has nine main programmes, including liquid and thick yoghurt, plus five free programmes for storing your own processing cycles. The additional sauce and speciality programmes described apply only to the Pastomaster 60 HE.
If you also plan to make yoghurt or dessert bases, include those recipes in your enquiry. Have the programme selection of the specific machine confirmed in the quotation; the fill ranges above remain a separate selection criterion.
Pasteuriser, ageing vat or multifunction machine?
These machines serve different purposes. A pasteuriser processes mix using a specified temperature programme; an ageing vat holds prepared mix under the prescribed conditions. Check the functions of a multifunction machine separately and plan equipment around your production workflow.
Choosing a pasteuriser: information for your production plan
- How much ice cream mix do you process each day and for each recipe?
- What are the minimum and maximum fill levels of the proposed model?
- How will mix preparation, ageing and freezing fit into the production schedule?
- Which connections, cooling arrangements and cleaning access are available?
For a suitable quotation, tell us about your recipes, planned batches and existing equipment. Temperature programmes and processing must follow the specific machine instructions and your operating procedures.

Choose a pasteuriser for your ice cream production
Compare the permitted minimum and maximum fill volumes, programmes, and heating and cooling times in the manufacturer documentation. Your recipes, batch schedule and subsequent processing determine which version suits your business.
Check the specific Carpigiani model
Controls, agitators and available process records vary by model and specification. Have the required functions confirmed in your quotation. A pasteuriser supports production; your hygiene procedures and operating checks must be appropriate for the process.
Plan capacity around daily production
Use realistic batch sizes and your busiest production period. Allow for filling, heating, cooling, emptying and cleaning. Minimum fill and maximum capacity depend on the model.
Compare operating costs transparently
Alongside purchase price, consider electricity and, where applicable, water use, cleaning and maintenance. Rated electrical power is not average energy consumption. Ask for available consumption figures and the operating conditions under which they were measured.

Integration into production
Integrating a pasteuriser into the workflow requires careful planning. Position it to minimise distances to subsequent processing stages. Provide enough space to prepare mixes and make cleaning and maintenance straightforward.

Plan cleaning and process checks
Before purchase, check access to food-contact parts, cleaning steps and the instructions in the operating manual. Automatic functions do not replace required checks or your business hygiene plan.
